I boiled okra once and ate some of it then started gagging. Boiled, it kind of

swims in a sea of warm mucous. Years later, at Cracker Barrel, I tried okra for

a second time - batter and fried. I can't say I liked it the second time, but

at least I managed to eat it without gagging.

Is there a palatable way to prepare okra and still benefit from its nutrients?

Health Benefits of Okra (Hibiscus esculentus). A guy had been suffering from

constipation for the past 20 years and recently from acid reflux. He didn't

realize that the treatment could be so simple -- OKRA! He started eating okra

within the last 2 months and since then have never taken medication again. All

he did was eat 6 pieces of OKRA everyday. He's now regular and his blood sugar

control. Here are some facts on okra (from the research of Ms. Sylvia Zook, PH.D

(nutrition), University of Illinois. " Okra is a powerhouse of valuable nutrients,

nearly half of which is soluble fiber in the form of gums and pectins. Soluble

fiber helpsto lower serum cholesterol, reducing the risk of heart disease. The

other half is insoluble fiber which helps to keep the intestinal tract healthy,

decreasing the risk of some forms of cancer, especially colo-rectal cancer.

Nearly 10% of the recommended levels of vitamin B6 and folic acid is also

present in a half cup of cooked okra.Okra is a rich source of many nutrients,

including fiber, vitaminB6 and folic acid......

Walter,

My Grandmother always said the more you handle it, the slimier it

gets. She would cut off the cap and tip (and discard) under cold running water,

then simmer it for a short while in a pan with a little water, 5 to 10 min

should be plenty. I use a frying pan so it is in one layer and simmers even

quicker. Season with sea salt, a little pepper, and if you are familiar with the

Budwig protocol, add little oleolux at the end. The less cooking and handling

the better. Also your fingernail should be able to easily penetrate the flesh (

as you are trimming it), if not, it is old and probably too tuff.

Also a lot of people like to simmer it with stewed tomatoes and some

onion. That usually isn't too slimy either.

It is one of my summer favorites! Glad to know it is so good for you!

This is a good way to cook it. I would not suggest batter frying it.

grains fried in oil can be carcenogenic. I have not tried it in a

Vitamix. It would be nutritious if you like the taste.
