For instance, people are overly concerned with pH and just stick with baking soda. It might be fine. There are lots of other alkaline and other minerals the body needs to heal besides NaHCO3. Do people have a lack of NaHCO3 in their body? However, we do need to eat a mostly alkaline diet. The body does regulate itself by balancing the pH. The body will also use up more energy by eating an acid diet. The body will eventually become more alkaline but that extra energy could be used to heal the body instead of digesting and redistributing the nutrients. Efficiency counts. Why tax it more than necessary. If one eats chemicals, the body will also establish a sort of equilibrium.
