It was information similar to the enzyme connection, that led to my foray into fermentation land - I started with sourdough. Was soooo fun!!! Anyway, I got the most dramatic results with my older daughter, just from the sourdough itself. Lots of happy dances for her, as her belly issues got soooo very much better The best resource I found, for the science behind it all, was at Rene's group. She has some totally awesome files in place that I mostly just barely managed to skim.
