If you have any tips re the sourdough, I am all ears. I don't think lectins were ever an issue here. Anyway, I got the most dramatic results with my older daughter, just from the sourdough itself. Lots of happy dances for her, as her belly issues got soooo very much better The best resource I found, for the science behind it all, was at Rene's group. She has some totally awesome files in place that I mostly just barely managed to skim. Kneading enough & not ending up with it too dry, were my biggest hurdles - probably took a full 3-ish months, to get that " oh! this is how it goes " thing going on.
