ps to previous post - Another tangent - lectins, soaking, fermenting

and sourdough. It was information similar to the enzyme connection,

that led to my foray into fermentation land - I started with

sourdough. Was soooo fun!!!

===>We do use soaked whole wheat bread, which I make. She didn't have trouble

with wheat but it is better for you, trouble is that is all she will eat now,

it's what she has had since she was 3. We did try a very expensive 100% whole

wheat Artisan bread but she didn't like it.

I did try sourdough, would dearly love to make this, but was unable to figure

it out. The flour/water yeasted up just fine, but I get stuck everytime as I

try to proceed with the recipe. Glad you're more clever than me :-) and glad to

hear it was helpful for your daughter. If you have any tips re the sourdough, I

am all ears.

I don't think lectins were ever an issue here.

Anyway, I got the most dramatic results

with my older daughter, just from the sourdough itself. Lots of happy

dances for her, as her belly issues got soooo very much better ;) The

best resource I found, for the science behind it all, was at Rene's

group. She has some totally awesome files in place that I mostly just

barely managed to skim. With lots of reading and rereading of the ones

most pertinent for me...there is alot of really good information there.

Aannnddd, while looking into these tangents, for " real life " things to

do, I went to onibasu.com and joined a couple (few?) of those groups -

microbial and/or native nutrition are a couple of them...fun stuff and

Very, Very helpful for me, as I have that inherent (taught) ick factor

& it took alot of browsing to work past it....Very Grateful that I did

:) whew, understatment! ...wishing all the best, elizabeth

Are you dairy free?

===>No, we do milk, I had no idea you could use milk. And we also use King

Arthur whole wheat. I'd love your sourdough starter pages, at your convenience,

eliz.

My favorite starter is the milk/flour version,

for the " end result. " ;) Didn't like the water/flour breads that

much. Kneading enough & not ending up with it too dry, were my biggest

hurdles - probably took a full 3-ish months, to get that " oh! this is

how it goes " thing going on. I have two favorite sourdough

starter/bread pages - can hunt those up, if you want...wishing you the

best, elizabeth
