Guest guest Posted July 31, 2006 Report Share Posted July 31, 2006 I usually start off the day with a barely-ripe avocado if I don't fancy eggs. And I've stopped having eggs with meat or fish, I find I can digest them better separately. Otherwise, there's an awful lot you can do with an omelette. One of my favourite recipes is finely diced or grated courgette (zucchini) and red peppers. Grate and salt the courgette and squeeze the excess fluid out of it with kitchen roll, finely dice the peppers and heat them gently in a frying pan with a little clarified butter or coconut oil if you prefer. While they're heating, whisk two eggs till they're really light, stir in the courgette till the egg coats it all, and pour into the pan over the peppers. Cover and cook very gently till mostly firm, flip and cook the other side, season and serve. Even people not on the candida diet like that one! That's just one example, you can vary the vegetables, as long as you chop/dice them into appropriate sizes for the cooking time. Scrambled eggs do get a bit boring! You can always add different herbs to them for a change. Sage makes for interesting scrambled eggs, and I'm lucky enough to have giant garlic chives growing in my garden - they're nice in any egg dish. Lemon thyme is lovely (for eggs, fish or chicken) but it's hard to get hold of round here. Hope that helps for ideas, and maybe for improving digestion a bit. Guest guest Posted August 1, 2006 Report Share Posted August 1, 2006 my husband also reached a limit on eating eggs with runny yolks, we had them every day for months and one day he just couldn't do it. we switched to scrambled and he was fine. we mix it up by scrambling different veggies in too. sometimes we have them plain, other days we add some combination of zucchini, peppers, onion, garlic, spinach, asparagus, leftover steamed veggies from the night before... sometimes you can just reach a maximum point with a food too. whether its mental, or tastebuds, or digestively. you might want to lay off the eggs for a few days, or a week, and then come back to them. and you don't have to eat " breakfast foods " for breakfast. when i first began the candida diet 2+ years ago, my favorite breakfast was a bowl of beef soup, with fresh veggies and greens simmered in, topped with coconut oil and cayenne pepper. if i had that right now i'd be having it for breakfast! its a wonderul way to wake up the digestive system. a bowl of warm broth, lightly cooked veggies and some slow cooked beef with a good dose of fat. perfect. its super easy too, because you can make a big pot of it, and then just heat up single servings with the fresh veggies/greens added each day. chicken or turkey soup would be just as good, or beef stew, or chili... if its too hot where you are to think of eating warm soup, try leftovers of other kinds for breakfast. on a hot day, sometimes i just want a blended salad (my recipe is in the files) drizzled with olive oil and some leftover protein from the night before. make extra portions of something like salmon & steamed veggies and try it cold for breakfast, topped with a good dollop of homemade mayo, with some sauerkraut on the side. again, good protein, good fat, good veggies. or leftover roast chicken is perfect and easy for breakfast too! hth ~ suz > I am having a dificult time with breakfast choices. Since i began this diet i have eggs in the morning with maybe chicken, steak, or spinach. Lately i have been sick to my stomach after eating them if they are easy over but not so much if they are scrambled. How is this possible? I use butter for both, its the same old egg, but i have been noticing it is a distinct difference if i scramble them. Weird or could it just be my stomach. If you continue eating them you should have less and less upset. But also ensure you have enough stomach acid; you might need to take Betaine Hydrochloric Acid tablets - see the Digestion Folder on how to test for stomach acid and how to take HCl. Most candida sufferers' stomach acid is too low because candida interferes with acid production. Another thing is during natural healing your body re-traces previous symptoms, injuries, diseases, etc., i.e. upset stomach, according to Hering's Law of Cures - see that section in my article, which is towards the end. One thing I learned with my very allergic daughter...is that I would wipe a little of the questionable food on an sore....after I picked it open and if she reacted within 15 min....don't feed it to em!! Might be one way to see how she reacts...also how does she react with other sulfur based supps? Chickens are also fed fishmeal and arsenic-treated seeds/grain so either or both could be the issue. S S Eggs... Guest guest Posted September 21, 2008 Report Share Posted September 21, 2008 I think it has to do with the sulfur (Andy says mercury toxic people have problems with sulfur), or perhaps carotenes as Dana points out. Both my eldest son and I get cranky after eating eggs, and the younger is igE and igG allergic.
