I just started making this and it works pretty well. First, you have to have a good food processor. I got an " as seen on TV " " Ninja " from bed bath and beyond, and it is wonderful(and cheap) but any powerful one will do. My son has always had trouble with almonds due to the high phenols, but I found out that soaking them first can help diminish that effect. Here is the recipe: soak a bag of GFCF organic almonds (whole foods or trader joes) in a glass bowl overnight, in a pinch 2 hours is enough...then: 1 1/2 cup ground nuts 4 eggs 1tsp GFCF organic vanilla 1/2 tsp salt 1 to 2 jars of organic baby food pears (earth's best organic is the only one I use) Grind nuts in food processor until paste-like looking, remove nuts. Blend eggs, vanilla and salt in food processor until smooth Add ground nuts and blend again. It will be a thick paste, add pears until a bit thinner Don't panic it is thick and sticky. Heat up pan, add GFCF butter (Earth Balance- Vegan and GF) When hot, spoon a golf ball size or so and flatten a " pancake " into the pan cook until light brown on each side. I make these in pizza shapes, add GFCF pizza sauce from GFFOODS.com and some turkey sausage, cookie sizes with some (a tiny bit) of powdered sugar for a treat, thicker for sandwiches etc... It takes a few to get it right. The original calls for baking soda & honey, but soda usually has corn in it or isn't GFCF (contaminated facility that processes it) & honey can increase his yeast so to be safe I make it without. I was there on New Year's Eve and could not find ONE brand of nuts--shelled or in the shell--that didn't say they were processed at a facility that could be cc'd with wheat and dairy (even WF's 365 brand). I left there so frustrated and about to go NUTS, but w/out any edible nuts for my faux-whipped cream recipe I was supposed to be making for a New Year's get-together.... I would love to find a good source of GFCF nuts (almonds, pecans). Also looking for " safe " cooking oils--olive, sesame, almond oils. Do you think there is a huge issue with contamination issues? I can see if they shell them? Kind of the like not buying shredded cheese, understand. Avoid gluten/casein cross contamination by going directly to places that grow the nuts; or at least i hope so! Guest guest Posted January 4, 2010 Report Share Posted January 4, 2010 Hello, I made a mistake, I got the nuts from trader joes. But, I have a nut guy in van nuys that I googled. They sell large amounts of them. I don't get them in a shell, just in their skin and I soak them to ferment them and somehow decrease the phenols. You are right, it is hard to find nuts without the warning about facilities and milk/wheat. It didn't say it on my bag of nuts from traders. I am with Pam, go online or to a farm. I think they have them at the farmers market by me, but I can't get passed the pony rides since my son is getting better. He is becoming more interested in everything and able to ask for stuff, very different from the guy I could take everywhere and he would just sit in his stroller. It's a good thing, but I am not used to an interactive 3 year old. LOL. I will check this weekend at the market.
