Raw means right from the goat into a sterile container and into a

refrigerator and to your house. NO HEAT .. well if you need to make yogurt

or raw cheese they allow you to bring it up to 100 degrees as that is the

temp it comes out of the goat. Raw chevre(goat cheese usually made with the

culture that is in cultured buttermilk) aged 2 days .... heaven
