I eat a lot of stir fry's, taco's, eggs, don't worry about cholesterol, the white of the egg eats up the cholesterol of the yoke and more. I eat a lot of veggies, fixed on ice in my fridge. You can eat these like chips, and my family can make a meal out of them when they are fresh, and plentiful in the summer. In the winter you can find some good deals. We eat a lot of greens, mustard, kale, beet, I like rhubarb swiss chard. I still go for the more colors on my plate to be healthy. I do make one exception and that is for yams. They are very full of vitamins, and when mixed with the greens will balance out your hormones. You will feel it right away. Ok now for my recipes: Taco season Mix: 1/4 cup dried minced onion flakes 4 tsp. cornstarch 3 t. salt 4 T. chili powder 3 tsp. cumin 1 1/2 tsp. oregano 3 tsp. dried minced garlic 3 tsp. hot crushed red peppers you can omit this one if you like and use dried green peppers. I do. 2 tsp. beef bouillon Store in tight container. 2 T. equals one package of commercial I brown my hamburger in a non stick pan. drain the fat off by tipping the pan on the burner side... Get rid of that fat. I add my spice. In the mean time I dice tomatoes, lettuce, and other veggies I like. When everything is done. I take a tortilla and brown it on a clean pan sprayed with Pam. It will puff up and get golden brown. Then I fill it with the meat and veggies. This is so good and filling. Let me know what you think. I made something the other day that was really good. I browned some ground turkey, onions, and garlic in a pan and then cooked a bunch of different vegies (carrots, red potatoes, broccoli, cauliflower etc.- whatever you like). I layered them in a casserole dish and poured some gravy on that I made from the Body Ecology Cookbook on. I sprinkled with scallions and baked it in the oven. It was really good. Here is the gravy recipe: 2 Tbl organic, unrefined coconut oil, butter or ghee 2 1/2 - 3 Tbl amaranth flour 2 Cups vegetable broth or water 1/4 tsp. fresh minced garlic Dr. Bronner's Balanced Mineral Seasoning to taste ( I just used my own spices) Sea salt, Trocomare or Herbamare, to taste 1. In a small skillet, make a roux by melting the ghee, butter or oil and quickly stirring in flour. 2. Very slowly add vegetable broth or water, stirring constantly. 3. Add garlic and seasoning, adjust to taste I hope you like it. I did. Someone is sending me a recipe for a pumpkin pie and if it looks good I will pass it on. Take care. The reason I use tortillias is because they have no sugar and no yeast. I eat them with my egg in the morning. If I crave sugar, I take one and brown it in some butter, sprinkle it with cinn and the steva. I get it in a powdered style. Works great and the stevia helps build your imune system. Red potatoes do have more vitamins than white though. I am doing some more research. I feel better if I just have steak, salade and vegetables.
