Tapioca Flour

Hi again!

I just found out that I can not handle tapioca flour, which is part

of a wheat flour substitute combo for making muffins and breads.

Does anyone have a good allergy cookbook that gives suggestions that

do not use tapioca flour? Of course no yeast and no sugar as well.

I seem to be able to have Stevia now.

I do not agree with any flour as it is starch, and starch needs high amounts of

insulin to make glucose. Tapioca makes a slime that coats the entire GI tract

just like grains and nuts.
