I'd like to be clear on this myself because both of my parents are on coumadin and I was told by my father that he was to stay away from vitamin K because it could cause clots. ==>Vitamin K prevents clots and that is why a person taking blood thinning medications needs to avoid vegetables that are high in it, otherwise their blood can get too thin. Interesting enough, but your own body makes vitamin K in the large intestines. > I also have a suggestion that cabbage should be avoided (because of the vitamin K), but many other veggies can be cultured that should be lower in vit. K which would give the probiotic benefit of the rejuvelac and cabbage kraut. I have heard of culturing diakon radish for example and perhaps that is lower in vit. K. ==>I haven't checked into whether vitamin K is lower in cultured veggies. But goods foods are much healthier than taking blood thinning medications, i.e. garlic is the best, and to keep blood from clotting only 1 clove per day is required.
