Where do you get this sausage from, who makes it? I'd like to see if it's something I can get, a lot of times organic sausage still has nitrates. The best solution is never buy anything processed. If you bought the sausages, hand-made from a farmer you could verify what spices were used (exactly), otherwsie you cannot be certain what they contain.
