I ate at baja fresh a couple weeks ago - basically a bowl with

rice/beans/guac/ etc and I did not have a reaction. Maybe I got lucky.

It was in san luis obispo on the way back from la.

Maybe they meant they add the same oil to the rice as they use in the

friers? But not the frier oil itself? Just a guess.

A lot of rice is made by first frying the rice in a little bit of oil, then adding the water. the rice grain keeps its shape better that way. Maybe that's what they mean? I seriously doubt they put the rice in the deep fryer. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

I have heard before that some restaurants take the used oil from the fryer

and use it to pan fry other things, such as Spanish rice. If a restaurant

does this, then whatever was cooked in the used oil would be contaminated if

it was used to cook gluten products. I don't know how common this practice

is.

I just got a response back from Baja Fresh.The rice is not listed as

containing gluten or listed as being used in the deep trier. So that

information was incorrect.

Dear Mr. Morley:

Thank you for taking the time to contact Baja Fresh with your inquiry

regarding gluten (wheat, barley, rye and oats). The following menu

items contain gluten: Flour Tortillas, Tostada Shells. Flautas,

Tortilla Soup, Breaded Fish, Churros, Aztec Chocolate Chip Cookie,

and Raspberry Iced Tea (where available).

The above information is based on standard product formulations and

is current as of August 15, 2005. Variations may occur due to

differences in suppliers, ingredient substitutions, recipe revisions,

or product assembly at the restaurant level. We use only one fryer

in each restaurant to fry both gluten and non-gluten items; Chips,

Taquitos, Tostada Shells, Breaded Fish. All Baja Fresh menu entrees

are prepared to order on food contact surfaces that may have small

trace amounts of Gluten. Therefore there may be trace amounts of

glutens on entrees prepared on these surfaces or cooked in our deep

fryers.

I have sent another inquiry to Baja Fresh to find if they use the fryer

oil in the rice. They said they were not supposed to but would look into

it further and get back to me.
