Guest guest
I ate at baja fresh a couple weeks ago - basically a bowl with rice/beans/guac/ etc and I did not have a reaction. Maybe I got lucky. It was in san luis obispo on the way back from la. Maybe they meant they add the same oil to the rice as they use in the friers? But not the frier oil itself? Just a guess. -Luther On 7/30/08, Ligia Stockwell <lmstockwl@...> wrote: > I went to a Baja Fresh in CA and they told me that they fry their > rice. Guest guest
A lot of rice is made by first frying the rice in a little bit of oil, then adding the water. the rice grain keeps its shape better that way. Maybe that's what they mean? I seriously doubt they put the rice in the deep fryer. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Viviana Acevedo-Bolton Stanford University Civil and Environmental Engineering vivianaa@... ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ "los hermanos sean unidos, esa es la ley primera, que sino los devoran los de afuera..." ~ Fierro > I went to a Baja Fresh in CA and they told me that they fry their > rice. Guest guest
Thanks, Pam, for that useful (and disgusting) insight. It's something else to beware of. -----Original Message----- From: on behalf of Pam Newbury Sent: Thu 7/31/2008 2:45 PM Subject: [ ] Baja Fresh I have heard before that some restaurants take the used oil from the fryer and use it to pan fry other things, such as Spanish rice. If a restaurant does this, then whatever was cooked in the used oil would be contaminated if it was used to cook gluten products. I don't know how common this practice is. Guest guest
I just got a response back from Baja Fresh. The rice is not listed as containing gluten or listed as being used in the deep trier. So that information was incorrect. Dear Mr. Morley: Thank you for taking the time to contact Baja Fresh with your inquiry regarding gluten (wheat, barley, rye and oats). The following menu items contain gluten: Flour Tortillas, Tostada Shells. Flautas, Tortilla Soup, Breaded Fish, Churros, Aztec Chocolate Chip Cookie, and Raspberry Iced Tea (where available). The above information is based on standard product formulations and is current as of August 15, 2005. Variations may occur due to differences in suppliers, ingredient substitutions, recipe revisions, or product assembly at the restaurant level. We use only one fryer in each restaurant to fry both gluten and non-gluten items; Chips, Taquitos, Tostada Shells, Breaded Fish. All Baja Fresh menu entrees are prepared to order on food contact surfaces that may have small trace amounts of Gluten. Therefore there may be trace amounts of glutens on entrees prepared on these surfaces or cooked in our deep fryers. Our ingredient listings are reported by the manufacturers. Baja Fresh® Mexican Grill, its franchisees and employees do not assume responsibility for a particular sensitivity or allergy to any food provided in our restaurants. We encourage anyone with food sensitivities, allergies, or special dietary needs to consult with a medical professional for informed answers relating to their specific sensitivities and the risks involved when dining out. We hope you find this information useful. Have a nice day. Sincerely, Avery Baja Fresh Guest Response Line
Guest guest
I have sent another inquiry to Baja Fresh to find if they use the fryer oil in the rice. They said they were not supposed to but would look into it further and get back to me. Mark
