Guest guest Posted September 26, 2008 Report Share Posted September 26, 2008 There's been at least 3 magazine articles on bleu cheese stating that these days bread mold is replaced by laboratory cultures to insure quality. You might want to verify with specific producers which method they use, but we've found most bleu cheese to be safe.
