I promise -- dressing is easy. Maybe the easiest thing on your Thanksgiving menu. Unless you make plain cranberry sauce from scratch; for that, you just boil some cranberries and sugar and water together. Then you pour it in a bowl, and that's that. No gluten there! (I know you didn't ask about cranberry sauce, but I couldn't resist throwing it in.)

Actually, I now remember that my son-in-law is a hold-out. He looked crushed when the home-made cranberry sauce appeared on the table his first year with us. He now buys his own can of jellied cranberry sauce, the kind that gives you ribs around the sides. Each to his own.

Home-made cranberry sauce, the plain kind, stays good for a very long time in the refrigerator. But usually people use it up right away during snack raids.
