Here are some reviews I've done for gluten-free bakeries in Seattle: http://www.bookofyum.com/blog/category/seattle Panne Rizo in Vancouver, CANADA is very good as well. Kisaku sushi restaurant in Seattle impressed me by being versed in gluten/wheat free stuff- they have a wheat free tamari available on request. They also have terrific sushi. If you can make it to Portland, it's one of the best places in the US to eat gluten-free, with gluten-free pizza places, a fish n' chips place, and lots more.
