Do they have a comprehensive understanding of the issues? Guest guest Posted October 4, 2008 Report Share Posted October 4, 2008 I don't know why they use the term "gluten conscious" instead of "gluten free", but my guess is that it reflects two things: 1) a realistic view of what a restaurant can achieve in terms of limiting gluten cross -contamination and 2) a realistic view of legal liability. Last week, the restaurant in a very high-end resort took pains to give me a GF meal. Nevertheless, I got sick. As a result, I couldn't leave at check-out time, so my husband told the front desk why. They were, understandably, concerned that we might be accusing the restaurant of carelessness and offered to comp our room. (We declined.) Dealing with the general public and with CD diners must be the equivalent of walking a wobbly tightrope. H. I ordered off the gluten conscious menu. Soon after I started eating the waitress came and told me that she did not oreder gluten free items for me. It was too late, I have already eaten part of what I was given. The waitress did not know what gluten was. She quickly took my food back and reordered for me.
