I don’t think I’ve posted this.

Nice response from at San-J – and she said I could post it. Contact her

if you have any other questions. In a later email, she also mentioned that

they are reformulating five of their cooking sauces and three salad dressings

to be GF , early in 09. I’ll post if I get the details. Bron

Thank you for your e-mail. The Organic Wheat Free Tamari and

Organic Wheat Free Reduced Sodium Tamari do not contain any gluten

ingredients. The alcohol used in these products is derived from corn.

San-J International is aware of the sensitive nature that exists

for those who suffer from gluten intolerance. Since our facility processes

product containing wheat, San-J International has implemented specific

sanitation methods in an effort to prevent cross contamination of wheat in our

Organic Wheat Free Tamari and Organic Wheat Free Reduced Sodium Tamari. In

addition, we test each batch of these products for the presence of gluten.

Samples are also sent periodically to an outside laboratory as a means of confirming

the reliability of our tests.

Our

plant and these wheat free products are also inspected and certified by the

Gluten Free Certification Organization. You can find more information on this

group by visiting www.gfco.org.

Currently,

the FDA has not established a final definition or threshold for the term

gluten free nor has it developed a set of rules permitting its use. The Codex

Alimentarius Commission, an international advisory committee that promotes

uniform food guidelines and standards, has proposed a recommended threshold

limit as the definition for foods that are gluten free. Test results show that

San-J's Organic Wheat Free Tamari falls within the proposed range. At this

time, there is no testing kit that is sensitive enough to register 0 ppm

gluten.

Subject: Organic Wheat Free soy sauce - a question

Your soy sauce is delicious. Thank you for making a sauce

that those of us with allergies can enjoy.

I have a question. The nutritional information states

that the sauce (say Platinum label) is wheat free and I have read the

ingredients and can see no other source of gluten (rye or barley). I

think that it is fine, but we are trying to track down a source of minor gluten

contamination and I want to rule out our San J Wheat Free Tamari soy sauce

first.

Is it manufactured in a plant that also processes gluten

Is it gluten free?
