It is really, really easy to make your own vanilla extract.

Take a couple of vanilla beans, chop, and put in a pint jar. Pour in your

choice of alcohol – light rum, potato vodka, tequila,.etc. Place on the

window sill and shake ever day or so until the alcohol changes color, open and

sniff. If strong enough, strain (or not) and use. You can dry the bits of

vanilla and put them in some sugar to make vanilla sugar.

Thanks for the tip on making vanilla extract. I might have to try that.

How long does the homemade extract last? If you use something such as tequila, does the distinct taste remain?
