As my wife and I are always looking for less expensive GF-friendly restaurants, I asked the company the below three questions. Afterwards is the response I just received from Pei Wei executive Tim Schar. 1. Do you plan any locations in the San Francisco Bay Area? I live in Silicon Valley , and the only chain gluten-free options are PF Chang's and Outback (and, maybe, Chevy's). We could really use PW in this area, particularly in the South Bay . 2. Do you have any plans to expand your gluten-free offerings? There is a rapidly growing concern in this area about gluten in addition to all of those with celiac sprue and wheat allergies. 3. How do you prevent cross-contamination in your kitchens? A member of my family has a severe case of celiac sprue (anemia), and traces can affect her.- ----- Forwarded Message ---- Thank you for taking the time to write to us and inquire about future locations and our gluten free offerings. We are continually looking for new sites to expand Pei Wei across the state of California , but currently do not have anything under development for the San Francisco area. I know that it is a great market and do look forward to expanding our brand there, but it will still be awhile before we make it to San Francisco . We are looking to expand and improve our gluten free offerings as we do see this as a growing concern for our guests and their families. We have been testing a gluten free Kung Pau sauce that would give us the ability to make many more of our dishes gluten free. Regarding the prevention of cross contamination; anytime that an order is sent to the kitchen “gluten free” or with any other food allergies our wok cooks have been trained to thoroughly clean all utensils, their wok and to only utilize fresh oil to cook those items. We know that food allergies can be very serious, even life threatening and with that in mind our cooks are trained to react with the same seriousness to insure that cross contamination from other items does not occur.
