It's painfully clear I have celiacs now after the symptoms I'm still having a week later. As much as I may want to throw a temper tantrum in the grocery store passing those innocent looking delights, I guess I've got to get down to business. I do not want to experience these symptoms again!! I need some advice as I buckle down and be a good sport. 1. Do I really need to get new pans? I live alone, so no cross contamination issues--just residual. (They are old) 2. What is your favorite recipe resource? Cookbook, website, other people? 3. What was the most sneaky, surprising source of gluten that you learned the hard way to watch out for and do things " processed in facilities, blah, blah, " ever make you sick? 4. How many " episodes " do you average by accidental exposure? I'm trying to figure out how strict I need to be without being afraid of food or feeling like the world is full of poison. Guest guest Posted January 24, 2009 Report Share Posted January 24, 2009 **My** personal answers to your questions: 1. new baking pans: sorry, but yes, I would. or you can use parchment every single time you bake, which had the advantage of keeping foods from sticking 2. recipe sources: friends, support groups, Bette Hagman books when you first start out 3. constant problem with gluten: processed foods from Trader Joe's. I don't give a d@mn if their labels say " gluten free " we both still get sick from them. most of their outsourced products are made on shared - as in " contaminated " - equipment and I know many celiacs who no longer trust that company at all. 4. accidental exposures: very few. For my celiac kid, 3 in 2008, for me, 4. we've been at this 5 years, cook mainly at home, and double-check everything. Two of my son's exposures were caused by someone who made serious " goofs " in their home, the 3rd was the last, and I do mean, last time we went to Chili's. I am a bit hesitant to say anything, I am severely gluten intolerant and really value the advice of this forum, it has really helped me in the past. So I really don't want to self-promote. But I am very passionate about spreading awareness about gluten sensitivities--in hopes to help people to be diagnosed before having to go through some of the awful symptoms and wrong diagnoses that we did, so my boyfriend and I created a gluten-free search engine, GlutenFreeFox.com. Which actually does have a toolbar widget, you just type in your search terms and it handles the gluten-free part. We hand key every one of the hundreds of sites that are in there. If you have any suggestions for sites to add, or improvements that can make it a better tool, I would love to hear them. First, let me just express this... there is SOOOO-MUCH-YUMMY and satisfing food that is easy and safe to eat and prepare! Our family of four even traveled for one month (to Vietnam and Cambodia) and only saw ONE city that had bread. It was practically a gluten free-land...lol... We do a lot of cooking and the best rice pot (and quinoa) pot I have ever used is a small LeCruset. Twenty five years new...and going strong. (Lots of reasons to use a pot that does not leach metals ....www.Mercola.com has good explaination of this. LeCruset has an outlet/seconds sale every year. I bought a piece a year. Second. Favorite new cookbook...Cafe Gratitude and the new one for desserts...Sweet Gratitude. For some more unusual stuff and excellent desserts. Highlights in book Fresh nutmilk is a snap and very, very delicious. USE RAW NUTS. Cooked nuts are hard on the digestion. Soak almonds to remove toxins on the skin.... How to make coconut milk and desserts with coconut. (very, very good for you) A new and very nutritious way to make things solid...like puddings and faux 'cheesecake' and such. Best raw nut and date crust I've ever made. Great dressing and sauce ideas. Note: The raw foodies have some very inventive new ideas. FRESH FOOD FAVE Fresh PESTO with cilantro and parsely and walnuts. Very mild yet super green and walnuts for brainfood. Can use Spinach and Arugula and of course basil... Pesto HINT If you are dairy free....Miso paste adds that salty depth that cheese would have added. You won't miss it. It freezes. Serve it on rice or quinoa with carmelized onions and other veges... FAVORITE SITE! Donna Gates Body Ecology. She is brilliant. Her info on pro-biotics is VERY INFORMATIVE for those with any digestive challenges. IMPORTANT! last but NOT least...the fear, sadness, guilt, anger and other emotional stuff .... This was a huge challenge when my daughter was small. Making a mistake and the aftermath affected us all. I've co-created an Energy Psychology protocal that is a dynamic way to upshift the fear response.
