Equal amounts water, oil, and milk (I use 1/3 c ea) and 1 teaspoon of salt heated to a foamy boil. Add 2 c tapioca flour off heat and stir a long time with a wooden spoon (3-5 min?) until forms a ball. Let cool 15 min then add 1 1/4 to 1 1/2 c grated parmesan cheese or a combination of parm and cheddar and 2 eggs (adding in one at a time) and stir until thoroughly combined. It will be a sticky, gloppy mess. Oil your hands or a spoon or small disher (like an ice cream scoop) and form into small balls and bake in 375 oven for 15 - 20 min depending on the size. I often scoop them into a mini muffin pan and freeze. Then I pop them into a ziplock bag and bake as needed. Maia Quote Link to comment Share on other sites More sharing options...
