Guest guest Posted December 11, 2008 Report Share Posted December 11, 2008 Hi , Though it's not close to Panko but still good, I usually bread fish with a mixture of 1 cup GF flour mix, 1/3 cup grated parmesan or romano cheese, salt & pepper and it comes out really good. (I recommend dipping the fish first in a mixture of egg and buttermilk.) For breading chicken, I toast the Whole Foods GF Sandwich bread, mix it with some parmesan or romano cheese, & add salt and pepper as well. Guest guest Posted December 12, 2008 Report Share Posted December 12, 2008 OK, I was diagnosed a month ago an my passion is cooking so I will pass on something I tried and it turned out better than NON GF! I ground up GF corn flakes, honey sweetened, in the food processor and used them as I would bread crumbs. I first dipped boneless chicken breasts in evaporated milk, then dipped them immediately in beaten eggs, then dipped them in the ground up GF corn flakes. I then simply cooked them in a pan with a combo of butter and olive oil, oh and I salted and peppered the breasts first after washing them. The chicken breasts were better than NON GF! On fish I like using the Louisiana Fish Fry. It is a corn meal/flour mix. It is really good. I like the lemon flavoring on the best.
