To sterilize means to remove all microorgnisms, etc. I assume this isn't quite what you meant.

Sterilizing a wok wouldn't remove the gluten.

How nice that you were able to find a place that was willing to wash a wok three times! That's service!

Be wary of any wok away from home. I ate in an excellent Vancouver fish restaurant that had hired a specialist to train their staff in gluten-free procedures. They told me they could scrub a wok for me, but that it would retain gluten because of its texture.

On the other hand, I've heard from CD people who say they've travelled in China with no ill effects.

There are GF tamari sauces other than San-J (which I like fairly well) and Eden (which seems metallic to me). Tastes vary widely when it comes to soy sauces. Find the one that suits you -- just be sure to read the labels carefully.

I don't see how vinegar would remove gluten from a porous surface, but I'm not a scientist.

Thanks for your input! They used boiling distilled vinegar to clean the wok, just as one would in cleaning a griddle. This actually does remove ANY and all residue from the wok! Robinrobin@...
