gluten free spice cake recipe

Hi all,

I still don't have the lemon cake recipe for you -- I meant to bring

it to work but by accident I brought a different recipe instead. This

is a gluten free spice cake recipe that my aunt sent me recently from

Healthy Cooking Magazine. I haven't made it, but it looks yummy and

holiday-worthy. I might make it around Christmas and if I do I can

report back on how it tasted.

GLUTEN FREE SPICE CAKE

1 cup unsweetened applesauce

1/2 cup honey

2 eggs

2 tablespoons canola oil

1 tsp vanilla extract

1 1/2 cups brown rice flour

1 1/2 tsps ground ginger

1 1/2 tsps ground cinnamon

1 1/4 tsps baking powder

1/2 tsp salt

1/4 tsp baking soda

1/4 tsp ground nutmeg

1/4 tsp ground allspice

1/8 tsp ground cloves

1/2 cup finely chopped walnuts

1/4 cup finely choopped dried apricots

1 tsp grated orange peel

1 tsp powdered sugar

1. In large mixing bowl, beat the applesauce, honey, eggs, oil and

vanilla until well blended. Combine the rice flour, spices, baking

powder and soda, salt, and then gradually beat into the applesauce

mixture until blended. Stir in the walnuts, apricots and orange peel.

2. Transfer to an 8-inch-square baking dish coated with oil/butter or

cooking spray. Bake at 350 for 28-32 minutes or until a toothpick

inserted in the center comes out clean. Cool on a wire rack. Sprinkle

with powdered sugar.
