I have been gluten for a year now but there is one thing that I still struggle with, and that is making good lunches for myself. I'm fresh out of ideas for quick, healthy lunches that are low fuss. I find that since going gluten free I usually don't eat much for lunch which isn't good. To compound things I am pregnant now so I have to avoid certain foods like deli meats, and I'm also a stay at home mom to my 20 month old toddler so I find myself barely even having time to make myself a decent lunch by the time I am done feeding him (he can eat gluten). Also, I hadn't been dx with Celiac yet when I had my son so I ate gluten throughout my first pregnancy. I definitely don't have time to fix anything too complicated. I'm interested in hearing from those of you that fix your lunch everyday - do you have any recommendations for quick, easy, and filling meals? Thanks a bunch! Guest guest Posted February 25, 2009 Report Share Posted February 25, 2009 Boar's Head Natural Deli Meats are all OKThermos filled with: (I make two different pots a week and keep them in the refrigerator for the week)Black Beans and RiceMeat Sauce over RiceTomato SoupPea SoupLentil SoupVegetable SoupLettuce Sandwiches filled with avocado, cheese, bean sprouts, cream cheese, tomatoLettuce Sandwiches with fresh cooked chicken, meat, etc.Salads Galore (Tuna,Chicken, Veggie)Amy's Frozen Enchiladas, Cheese GfBroil any GF sausage (chicken, mushroom, etc) and wrap in foil which will keep it warm for lunchI roll Boar's Head GF Natural meats with cheese and have "rolls" with a piece of fruitLeftovers in a thermos! Make extra portion of whatever you are serving for dinner and put it in a wide mouth thermos.Anything GF in a corn tortillaChicken and veggie kabobsYogurtYogurt and cottage cheeseCottage Cheese and fruit mixedGiven the fact you have a toddler simply make extra food for dinner and reheat! I always cooked while raising our two kids 22 months apart, I simply made them playdough and they played with it while I cooked! I hope some of these ideas offer you some yummy choices! In addition to the many ideas already shared: Swanson's soup broth with rice or rice noodles (i buy them at the asian markets) and I throw frozen chinese veggies and baby shrimp in the pot when it's boiling! Trader Joe's sells soup bowls that are just add water and GF. I have had no issue with them. microwave quesadilla is my laziest, slap the shredded cheese on a tortilla cover with another tortilla and zap for 1 minute (add garbanzo beans, olives, leftover chicken, whatever for a heartier version. Cook on a skillet and it's less rubbery. We make chili a lot, and eat it like a dip with tortilla chips. Easy to reheat. I'll take the bagged salad and throw a can of tuna or chicken over it or a can of beans for a vegetarian salad. When I'm a little more ambitious, I'll toast a slice of gf bread and cook some egg whites on it. Of course, all of the above can be fed to your little one for lunch too. For the two of us, both celiac, I make large batches of stew or lentils or whatever, and then freeze lunch portions in Glad plastic containers. This means I do lot of cooking one day, and then have 5 or 6 days' lunches readily available. Most can be microwaved (in Pyrex, not plastic boxes) in just a couple minutes for a healthy lunch. http://crockpot365.blogspot.com/ has a lot of gluten-free crockpot recipes and tips. Guest guest Posted February 27, 2009 Report Share Posted February 27, 2009 We do the same thing as Maureen although I put the leftovers directly into small glass pyrex containers and freeze so I can reheat using the same container. I stock up on the containers at the Corningware outlets (Great Mall- Milpitas or Gilroy outlets). That way we always have tons of options for lunch (or dinner if I'm not feeling up to cooking). I usually have a variety of things like chili, lasagna, chicken tikka masala, etc. I find potatoes and rice pasta (other than lasagna) do not freeze well. " Side dishes " which freeze well (I usually put them in the same container as the leftovers) are brown rice and frozen vegetables.
