I know some people have damage to the duodenum from CD, but usually the damage is in the small intestine. Of course, the gluten-free diet will prevent future damage and allow the gut to heal. If you want to optimize that process, here are a couple of suggestions. Reduce stress (stress uses nutrients that can be better used in healing). Eat easily digestible, organic foods rich in nutrients. Stay away from heavily processed foods with lots of additives. Avoiding soy and dairy, at least temporarily, as well as hard-to-digest grains such as canola (oil from rapeseed), quinoa, and amaranth helps some people. You don’t have to be strict about this (unless you are allergic to any of these separate from the gluten) and can add them back in when you are healed. I haven’t done it, but Kombucha (source of probiotics) can be made at home. For the Kim Chee, my husband makes up a batch occasionally. I know he has to stir it several times the first day or two or it goes bad. If you want his recipe, e-mail me off-list. I was just talking to my Chiro/pt about healing from gluten exposure. He recommended gargling (stimulates nerves in the alveolar nerve in the back of the throat) and aloe vera juice. Even better gargling with the aloe vera juice as well as drinking it.
