Guest guest Posted June 4, 2009 Report Share Posted June 4, 2009 When I make the recipe, I use a different flour blend- pretty similar except instead of the sorghum or chickpea flour I use brown rice flour, and then the flour where you select one, I use quinoa. I think that combination has great flavor (and is offered as a suggestion in her cookbook). I also always use raw honey for the added flavor boost. Also, before we found those my son was using the Health Valley rice bran crackers for his s'mores and they worked good as well. The Kinnikinick ones are a closer match to gluten graham crackers and I will eat them with my kids as a non celiac. Hope this helps! Guest guest Posted June 5, 2009 Report Share Posted June 5, 2009 At New Leaf in Felton, they have a GF, Vegan marshmallows. Very different from regular marshmallows, but just as sugary. I don’t remember what they are called but can check next time I go. I think they are made by an Israeli company (they are kosher and good for Passover). I checked on line and did not see that brand, but saw several other vegan, GF options for marshmallows. Even if you aren’t the least bit interested in eating marshmallows, it’s good to know they are out there if the occasion ever arrives…I guess you can find just about anything out there these days.
