Because it is Vietnamese food, I expected that it would be a relatively safe place to eat gluten free. When my husband told our waiter that I am gluten free, it was immediately clear that the waiter was educated on the subject. He was able to tell me immediately which dishes are gluten free, which can be made gluten free, and which have pre-made sauces or marinades that contain soy sauce or other gluten containing ingredients, and therefore, cannot be modified to be gluten free.
