At least that’s what it seems to be telling me. I think all the gluten-free bread products, while a nice treat every once in a while, aren’t such a good idea… Carbs have a very bad effect on me. I went out for sushi for my birthday and the next day I felt like crap. I could tell even the little bit of rice had a negative effect on me. I have the celiac gene and apparently some non-celiac gluten intolerance. I went to a GI doc who said that all my GI symptoms could be controlled with a low-carb diet, and he was right. The diet also fixed some strange other symptoms, like heart palpitations that were unexplained by the cardiologist, nausea, and headaches after eating. So I don't really know the answers to your questions...except that in my own body at least there does seem to be a link between autoimmune disease and carbs--some worse than others. Guest guest Posted April 13, 2009 Report Share Posted April 13, 2009 Going back to the celiac and carbs question - anyone who has problems with this....have you tried using digestive enzymes to help with the breakdown of carbs? Did it help? I'm thinking of trying it ........and although I'm not sure that I'd try this - has any one tried carb blockers? I've just had it in the back of my mind that carbs in general are a problem for me and after reading the recent posts it's encouraging me to do something about.
