I just got off the phone with , the Director of Operations of Willow Street

Pizza. They really do want to provide celiacs with a great g-f menu.

said that the Willow Glen Willow Street Pizza is being instructed on how to cook

the g-f pizza properly - in the meantime, please try the g-f pizza at their Los

Gatos Willow Street Pizza restaurant. She said that the flavor is really good

and the pizza crust is crispier. explains that the baking time needs to

be longer than regular pizzas in her email to me below:

Dear ,

We appreciate your feedback and have been working on making sure the pizza is

delicious. We have been experimenting with cooking times and have come up with

a solution. This type of crust needs to be cooked longer than our other pizzas.

Each Kitchen Manager has been informed. The pizzas I've had here in Los Gatos

have been surprisingly good to me.

Please give us another chance. We have worked hard to find ingredients and

products for a tasty and affordable alternative.
