Let me be one to tell you all that I wish EVERY restaurant owner was as wonderful, thoughtful, respectful and inquisitive as Mr. Langley. I believe he had people from the North Bay or Santa Celiac group go in and work with him to teach him about cross contamination and Celiac awareness. I went in with my parents, he came over to our table and had a 10 minute conversation with me about providing for Celiacs, why he does it and asked me many questions about it (mind you this was some time ago when he was just starting this). I told him I would post on this site (which I did)to share my experiences and am happy to do so again! I also went into Langley's, I believe even before they owned the pizzeria (and therefore probably before the training) and his staff made sure I had a fantastic meal (and let me tell you it was very, very good). If anyone is doing it right, it is him and we should thank him for it by going to his restaurants. Guest guest Posted May 13, 2009 Report Share Posted May 13, 2009 Hi , We have had training from Iscol, the head of the North Bay Celiacs and she did a walkthrough in both of our restaurants and she has us listed on the website www.northbayceliacs.org. I also have family members who have celiac disease. Most importantly is the reason we do it is purely out of caring about all people being able to go out and have a great dining experience. I have found as a pure business decision it would be better not to do it, but there is no way we will do that because more and more people are discovering what we have to offer and they truly appreciate it. That is very rewarding, for me and my staff! We do make our own gluten free pizza dough and we make it in Langley's before any other work has been done in the restaurant. Much safer because the pizzeria has lots of flour in the kitchen. I would love to have you come and visit us one day!
