Well... it depends on how you define cupcake. I

was thinking of a sweet recipe (under Quick Breads: Pumpkin Bread with Crumble

Nut Topping) that I made in muffin tins sprinkled with pecans and brown sugar.

I haven't frosted them, but you could easily. There's also a recipe for

yellow cake under Cakes, Cupcakes etc. using the pancake mix that would make a

great cupcake although I haven't tried it.
