Sliced up tomatoes with a tiny bit of olive oil and Italian spices make for a good sauce. Add whatever veggies you like--mushrooms, peppers, onions, spinach. Top with chicken (or lean ham or canadian bacon) and a little bit of low-fat or fat free cheese and baked until crispy definitely falls into the occasional authorized meal for me. I don't know what recipe you are using, but most call for olive oil in the crust. Don't use olive oil - use butter. Be generous with the butter because you need a lot of moisture for the whole wheat. We make it a fair amount, but never with whole wheat. Whole wheat, in my past experience, tastes awful unless it is really fresh. Whole sorghum, on the other hand, is quite good. Or even a cornmeal crust. But back when we ate wheat, no one could stomach whole wheat. It is quite good however and my kids are as happy with it as a real pizza. Substitute in what you like as if you were at a pizza place selecting your toppings. 3 Cheese and Pepperoni Bake 1 tablespoon olive oil 1/2 cup onion 1/2 cup green pepper 16 ounces cooked chicken breast halves, shredded 8 ounces pepperoni slices 2 4 ounce sliced mushrooms, drained cans 1 2.25 ounce sliced black olives 1 12 ounce tomato paste 1 tablespoon Italian Seasoning 1/4 teaspoon black pepper, to taste 1 teaspoon garlic powder, to taste 2 packets Splenda 2 cups cheddar cheese, grated 1/4 cup chicken broth 1 pound mozzarella cheese, grated 1/2 cup parmesan cheese, grated oregano, optional cilantro, optional 1. Prepare chicken and allow to cool. Shred or dice and set aside.2. In large skillet, saute onion and green pepper in olive oil. When onion and green pepper turn " clear, " add chicken, pepperoni, mushrooms, and black olives. Stir to blend and heat on low. 3. Add to skillet the tomato paste, Italian seasoning, black pepper, garlic powder, and Splenda. Stir to blend entire mixture and allow to heat through. Taste and adjust seasonings. If mixture is too thick, add chicken stock to thin to desired consistency. 4. Stir in Cheddar cheese and immediately transfer entire mixture to a 9 " x " greased casserole dish. Top with brick or mozzarella cheese slices. Sprinkle on parmesan cheese and oregano/cilantro. 5. Bake in 350?F oven for 25 - 30 minutes until cheese is melted and slightly browned and casserole is bubbly. Allow to sit for 5 minutes before slicing and serving. Pizza Does anyone make (gasp) pizza? Last time I just used the bread recipe I have (basically, flour, butter, milk, salt) and used it for the pizza. It wasn't over done but seemed dry or very chewy to me, the bread I make is very moist and soft. This time I tried olive oil instead of the butter, I guess I will find out if it's worse or not. We have pizza at our house every week, with 7 boys it's just something I do and try to use the best ingredients I can afford, but I don't bother with specially made cheese, it's just too expensive for the amount that we use. Besides we're cooking it so why spend the money? Unless it's organic I guess. I buy pepperoni from Wild Oats and sausage and pineapple and ham. That reminds me of one that got posted earlier -- basically you can make a crust out of hamburger and just top as you would pizza. Alvarado Street Bakery makes very nice sprouted organic wheat baked goods, including some excellent pizza " breads " . They are available in CA and NV, and through their website. If you're going to have a pizza " anyway " , and if you don't want to always make it _all_ from scratch, and you want to try to keep the crust both healthy and edible, I think their crust is a good option. They sell them in boxes of 6, for ease of shipping. They freeze quite well! http://www.alvaradostreetbakery.com/pizzabreads.html We also use the crusts for cheese fondue. We just cut it into big chunks. I have found that I really don't like it that much any more. It went down but not without some pain and I could not eat even a slice before the gurgling started! I buy Mama 's Gourmet Pizza Crusts at Albertson's, brush the top with olive oil, top it with marinara or pizza sauce and pepperoni, then bake it like a regular pizza. And now that I've been given the idea of adding baby food meat and veggies to the sauce, so much the better! Just order pizza without the cheese and lots of toppings.
