Whole grain pitas split in half so you end up with two circles

instead of two half-circles work well for the crust. Sliced up

tomatoes with a tiny bit of olive oil and Italian spices make for a

good sauce. Add whatever veggies you like--mushrooms, peppers,

onions, spinach. Top with chicken (or lean ham or canadian bacon) and

a little bit of low-fat or fat free cheese and baked until crispy

definitely falls into the occasional authorized meal for me.

Whole wheat pita (make sure the ingredients do not list bleached

flour)

low sugar/low fat spaghetti sauce

diced tomatoes, mushrooms, bell pepper, diced grilled chicken

1% shredded mozarella cheese

Bake and enjoy.

Now, if we could just eat the toppings and skip the crust, that might be even

healthier! <smile>

HI ,

I make pizza too, to keep my husband from eating " bad " food. I don't know

what recipe you are using, but most call for olive oil in the crust. Don't use

olive oil - use butter. Be generous with the butter because you need a lot of

moisture for the whole wheat. Hope this helps. I can give you my recipe when I

am at home.

We make it a fair amount, but never with whole wheat. Whole

wheat, in my past experience, tastes awful unless it is

really fresh. Whole sorghum, on the other hand,

is quite good. Or even a cornmeal crust. But back

when we ate wheat, no one could stomach whole wheat.

If you want quick and easy, chebe bread is good.

I got the following recipe from a low carb recipe board - it is a casserole

with no crust and yes - pepperoni!!! It is quite good however and my kids

are as happy with it as a real pizza. Substitute in what you like as if you

were at a pizza place selecting your toppings.

3 Cheese and Pepperoni Bake

1 tablespoon olive oil

1/2 cup onion

1/2 cup green pepper

16 ounces cooked chicken breast halves, shredded

8 ounces pepperoni slices

2 4 ounce sliced mushrooms, drained cans

1 2.25 ounce sliced black olives

1 12 ounce tomato paste

1 tablespoon Italian Seasoning

1/4 teaspoon black pepper, to taste

1 teaspoon garlic powder, to taste

2 packets Splenda

2 cups cheddar cheese, grated

1/4 cup chicken broth

1 pound mozzarella cheese, grated

1/2 cup parmesan cheese, grated

oregano, optional

cilantro, optional

1. Prepare chicken and allow to cool. Shred or dice and set aside.2. In

large skillet, saute onion and green pepper in olive oil. When

onion and green pepper turn " clear, " add chicken, pepperoni, mushrooms, and

black olives. Stir to blend and heat on low.

3. Add to skillet the tomato paste, Italian seasoning, black pepper, garlic

powder, and Splenda. Stir to blend entire mixture and allow to heat

through. Taste and adjust seasonings. If mixture is too thick, add

chicken stock to thin to desired consistency.

4. Stir in Cheddar cheese and immediately transfer entire mixture to a 9 " x

" greased casserole dish. Top with brick or mozzarella cheese slices.

Sprinkle on parmesan cheese and oregano/cilantro.

5. Bake in 350?F oven for 25 - 30 minutes until cheese is melted and

slightly browned and casserole is bubbly. Allow to sit for 5 minutes before

slicing and serving.

I was going to pipe in and say that I have been making wheat pizza dough from a

sourdough starter (Russian). Last time I just used the bread recipe I have

(basically, flour, butter, milk, salt) and used it for the pizza. It wasn't

over done but seemed dry or very chewy to me, the bread I make is very moist and

soft. This time I tried olive oil instead of the butter, I guess I will find

out if it's worse or not. We have pizza at our house every week, with 7 boys

it's just something I do and try to use the best ingredients I can afford, but I

don't bother with specially made cheese, it's just too expensive for the amount

that we use. Besides we're cooking it so why spend the money? Unless it's

organic I guess. I buy pepperoni from Wild Oats and sausage and pineapple and

ham.

That reminds me of one that got posted earlier -- basically

you can make a crust out of hamburger and just top as

you would pizza. I did it -- it wasn't bad, though VERY filling!

i made one using the NT yogurt dough and used white and whole spelt flours in

it. it turned out great but don't make the mistake that i did and forget that

the crusts need to pre-bake for awhile before you top them and bake again.

yikes, we had a soggy (but still kinda good) pizza. i can imagine it would have

been fantastic though! that's a good dough.

I have a mail-order suggestion...

Alvarado Street Bakery makes very nice sprouted organic wheat baked

goods, including some excellent pizza " breads " . They are available

in CA and NV, and through their website. If you're going to have a

pizza " anyway " , and if you don't want to always make it _all_ from

scratch, and you want to try to keep the crust both healthy and

edible, I think their crust is a good option. They sell them in

boxes of 6, for ease of shipping. They freeze quite well!

http://www.alvaradostreetbakery.com/pizzabreads.html

We also use the crusts for cheese fondue. We just cut it into big

chunks. We find they are robust enough to not fall apart on the

fondue forks and they can survive the dipping quite well too.

Welcome Ginger!! Congratulations on your surgery date!! My dob is 4/28 so I will be shortly behind you!! I will be 42 when I have my surgery and I too am looking forward to starting my life. Where are you from? I am from So. California in Chatsworth. Talk to ya soon, Tammy Irishgingershope <gingerlarsen@...> wrote: Hi, my name is Ginger and I am new to this group. Hearing all the positives REALLY helps. I still get that "look" when I tell people I'm going to Mexico. At this point I don't care anymore. I'm having this done and I'm moving on with my life. I'm 42

I also read about the book, "The anatomy or a food addiction". Definately going to get it. Is there anyone else out there who will be going to Mexicali between April 18th and April 21st? Let me know. Jenni!

I had a date with a piece of King Arthur Supreme tonight followed

closely by a date with the toilet... as in PBing... Not fun and now

my throat is quite sore. I was banded 8/11/05 & filled 11/25/05 and

have been " restricted " from day one.

Well, Liz....thanks. Thanks ALOT! :) Guess I won't be eating even one bite of pizza then! I am really glad I am going back to work today! I won't be able to see those commercials all day again! You know, every time one came on, I swear I could smell the pizza! Strange thing is that pizza is not even one of my favorite foods!!! I haven't eaten pizza in months even before my surgery but there is just something about that smell!! Thanks for the personal experience advice! What a pizza to start with - the new King Arthur. It's so loaded. I thought when the day comes, I might try a small piece of the basic cheese pizza and progress only as far as Gueneviere's Garden Delight! (yea Round Table!). PHyllis

I have had pizza too. I ate only the toppings--cheese only worked

best for me. I have found that I really don't like it that much any

more. It went down but not without some pain and I could not eat

even a slice before the gurgling started!

I have eaten pizza, it is my favorite food!! I can only eat one piece now and not any with the real thick doughy crust. I don't like thin, crispy, I just get a regular hand tossed type. And CHEW, CHEW, CHEW!!!!!!!! Tiny bites, slowly.

Pizza dough generally has no dairy; neither does pizza sauce (although

it can't hurt to check if you're ordering it from a pizzaria).

I buy Mama 's Gourmet Pizza Crusts at Albertson's, brush the top

with olive oil, top it with marinara or pizza sauce and pepperoni,

then bake it like a regular pizza. And now that I've been given the

idea of adding baby food meat and veggies to the sauce, so much the

better! :)

Just order pizza without the cheese

and lots of toppings. It is really quite good!!!

My opinion, Mariposa's pizza is "okay". Amici's is far better...it tastes more like the real deal. ;) Louise Audellart + designlouiseaudell.com(510) 531-4607From: "TrVerb@..." <TrVerb@...> Sent: Thursday, July 23, 2009 8:00:01 PMSubject: [ ] pizza

Just a reminder that Mariposa has fantastic pizza - the best gf that I've had thus far, and even my non-gf family love it, too. Great crust and really flavorful toppings and, of course, it is absolutely gluten free, made in their dedicated bakeshop. You can order a slice to eat there, or buy a whole frozen pie (or two, or three) to bake at home.

I liked Mariposa's a lot, haven't tried Amici's, sadly though, I have finally given up dairy (although, really, this is a good thing, but I miss cheese!) and I don't think Mariposa's makes a DF pizza.
