Hello Melita,I am happy to report that Ike's Place does use a wheat and gluten free bread. We handle cross contamination the same way we deal with vegan/vegetarian and meat sandwiches in that we make the sandwiches separately from other the sandwiches not of the same kind. For the gluten free bread, we take the added measure of making the sandwiches on our sandwich wrap and do our best to keep them away from the bread sandwiches. Normally when someone requests a gluten free sandwich, we ask how severe of an allergy they have. I wouldn't feel comfortable making a sandwich for someone that is severely gluten intolerant. We are, after all, a sandwich shop, and bread and crumbs are looming everywhere. If you or someone you know has a severe allergy, it is best to be safe and not take the risk. As of this day, I am yet to hear of a customer complain about a reaction from one of our sandwiches. I hope this helps. Thank you for taking the time to
