Guest guest Posted October 14, 2009 Report Share Posted October 14, 2009 Whole foods has GF stuffing mix during the holidays, though I made stuffing last year with WF GF corn bread, and it was great.WF also has GF pie crusts if you don't want to make your own, and the filling can be made with GF flour or cornstarch, and soy or rice milk (we're not dairy free so I don't know how it would taste). I don't know if the WF crusts have butter or another shortening. I use lard when I make them.My adult son has both celiac and inflammatory bowel disease. It's the pits, isn't it?I am a new member. Try and find a thick one with no additives, but even the trader joe's lite coconut milk works fine. I think this tastes better than, say, soy milk -- and is probably healthier too. Guest guest Posted October 16, 2009 Report Share Posted October 16, 2009 Hi Margaret, It’s great of you to support your son in this way; it’s hard enough to be diagnosed with ulcerative colitis, then to have to radically change his diet must be challenging and at times discouraging; your understanding and support will help smooth the transition. Sadly, the Whole Foods frozen pre-made pie crust contains butter. I have had good luck with the Gluten-free pantry’s pie crust mix, which is dairy-free if made with vegetable shortening (a good choice is Spectrum Naturals vegetable shortening). http://www.amazon.com/Gluten-Free-Pantry-Perfect-Crust-16-Ounce/dp/B000EVIDVI You might want to practice with it before Thanksgiving; GF pie crusts are tricky because the dough does not hold together; roll the crust on plastic wrap or press it directly into the pie pan with fingers and a pastry roller. As for the filling, I use Joy of Cooking’s pie crust recipe, which doesn’t call for any starch thickener; for the cream, you can substitute Mimicreme, a non-dairy cream substitute made with almonds (the unsweetened would be best). http://mimiccreme.com/ You can probably use any favorite pumpkin pie filling recipe, but if you want the Joy of Cooking recipe, let me know. For the stuffing, I like to use my mom’s stuffing recipe; the only thing I do different than she did is to make it with gluten-free bread cubes; to make them, cut any kind of GF bread into ½ inch cubes and dry them in the oven on low heat for a couple of hours (temp and time will depend on the type and freshness of the bread). Using dried bread cubes, you could use any favorite recipe for stuffing; you may find that you need to add a bit of extra liquid (I use Pacific Select Plain Lowfat Soy Milk and turkey drippings). Using dried bread cubes helps the stuffing maintain its shape and texture. Again, let me know if you want my recipe. You can order many of the special ingredients online, but if you want to shop for ingredients locally, let us know where you are located and someone on the list is sure to know where to find them.
