Guest guest Posted October 12, 2009 Report Share Posted October 12, 2009 I wasn't vegetarian before, but was on Atkins for a few years before I was diagnosed and a lot of the low carb baked stuff uses soy flour and adds vital wheat gluten too. So, perhaps there is a link with people who were on diets that had wheat gluten as an added ingredient. Also, there was an interesting article in yesterday's New York Times magazine section about an artisanal baker back east who sources and grinds his own wheat that was talking about the problem being the strains of wheat that are being used in America being a major source of the wheat intolerance problem. After 2 years post diagnosis I still felt bad and went vegan for a year 2 months before my 27th bday (no casein, no whey, no products made with eggs, etc.). Once I was diagnosed with CD, anytime I ate meat it felt like it sat in my system for a long time, like my body had a hard time digesting it. After a year of being vegan, I slowly incorporated certain dairy products, then eggs, then fish. I basically went vegan as an elimination diet (there’s very limited food vegan youre a GF Vegan who cant eat nuts, peanuts, soy or corn.) It helped me figure out better on what I could or couldn’t eat. I’ve been eating this way for 2 years. Not sure if I’ll ever eat meat again (never say never), I just think with all the animals being force fed grain, etc (as well as the treatment of them) – it doesn’t sit well with me physically or mentally.
