I wrote to Wingstop corporate as my husband was interested in eating in the San Ramon store. Here is the response. I called the San Ramon store and confirmed that they use separate fryers for the breaded chicken. So we promptly ordered wings to go, and yum, yum, yum!!!!!!!

Thank you for taking your time to contact us at Wingstop and for your inquiry regarding gluten in our foods.

You will be pleased to know that the only item on our menu that contains gluten is the breading on our boneless wing strips. We are happy to say that all of our wings, sauces, and side dishes are gluten - free! However, we must mention that even though our wings are not breaded, there is a possibility that our wings could be fried in shortening that had also fried our breaded wing strips. Therefore there is a possibility that our wings may contain some gluten from frying in the same shortening.
