Guest guest Posted September 6, 2009 Report Share Posted September 6, 2009 I wonder if this woman is European? In Europe they accept wheat processed to be < 20 ppm GF as part of the celiac diet. If she isn’t European herself, maybe she has heard of or had some experience in Europe or with one of the companies that are trying to market similar products (products called gluten-free but made with wheat starch) in the US, and has not understood the difference between white flour made from wheat and the processed stuff. On the other hand, maybe she just wasn’t paying attention when you told her about white flour before. Alternatively, sometimes people are just stubborn about it and think they are being helpful (years after my husband’s diagnosis my mother-in-law was still having trouble with the concept of gluten-free).
