In classic Sauce Alfredo, one doesn't need to use anything to thicken. It contains heavy cream, freshly-grated Parmesan cheese, garlic, flat-leaf parsley and nothing else. I was fortunate; I lived in Rome when I was so young that I cared nothing at all about calories.

Some American recipes for Alfredo contain cream cheese; this would change the taste entirely.

I couldn't open your attachments, unfortunately. I don't think that attachments work on our list.

I haven't used soy milk, so I can't say whether it would work.

1/4 cup butter

1 cup heavy cream

1 clove garlic, crushed

1 1/2 cups freshly grated Parmesan cheese

1/4 cup chopped fresh parsleyMelt butter in a medium saucepan over medium low heat.

Add cream and simmer for 5 minutes.

Add garlic and cheese and

whisk quickly, heating through.

Stir in parsley and serve.

Would I use sweetened or unsweetened crème substitute?

Can alfredo sauce be made out of soy milk?

Sounds delicious.  How would I make without dairy?  Would soy

cheese be a good substitute.

Since being gluten and diary fee we’ve had a hard time coming up

with an alfredo recipe.

Any Ideas?

I think it might be best to find another dish that you like. I don't think Alfredo would translate well to dairy free, as the flavors of the Parmesan and cream are what make it happen.

I should have mentioned that dairy intolerances can go away as one heals. After you've been GF for a while and have avoided lactose/casein (whatever gives you problems), then you may find that dairy products are fine in reasonable amounts.

I became severely lactose-intolerant a few years ago. I strictly avoided it for a year. Now, I'm able to have a serving of any dairy-rich dish with no problems. If I get greedy, then the symptoms return.

So, a reasonable serving of real Alfredo sauce could be in your future.

Hi Cara,

Here is a healthy recipe using tofu that I've used before and is pretty tasty.

I'm not DF, but I'm sure you could substitute the cheese for DF cheese. Just a

suggestion.

Tofu Fettuccini Alfredo

Serves: 4

Replacing cream with tofu makes this decadent pasta dish a welcome addition to

any healthy diet.

INGREDIENTS

2 cups fettuccini

12 oz. soft (silken) tofu, drained

3 garlic cloves, minced

1/4 cup grated parmesan cheese

1/4 cup grated Romano cheese

1 tablespoon olive oil

1 tablespoon onion powder

Salt and pepper to taste

DIRECTIONS

1. Cook the pasta according to the manufacturer's instructions.

2. While the pasta is boiling, place the drained tofu, garlic, both cheeses,

olive oil, and onion powder into a blender. Blend until smooth.

3. Pour soy mixture into a saucepan. Warm over medium heat, stirring

occasionally. 4. Toss drained pasta with Alfredo sauce.

NUTRITION INFO (per serving)

Calories: 268.3

Fat: 12.6 g

Carbohydrates: 23.3 g

Protein: 16.1 g
