For those who are lactose intolerant:

Hard, aged cheeses contain a great deal less lactose than new, young cheeses (such as mozzarella). The lactose is consumed during the cheese's aging process.

Those of us with CD who are lactose intolerant may find that they can eat dairy products eventually, after their small intestine heals from CD and after they've avoided dairy for a period of time.

I became very severely lactose intolerant about two years after going carefully, completely GF. I didn't suspect the cause and kept eating more and more yogurt to "fix" my problem, and eventually I became truly ill. I avoided every trace of dairy meticulously for a year. Now, I can eat single servings of any dairy product without difficulty.

Bonnie, my guess is that you were referring to Greek yogurt made from sheep's milk. (Lovely stuff, especially in Crete - ah, memories.) People new to it may not notice that Greek yogurt in supermarkets may be made from cows' milk. That will be fine for some people, less so for others.

Incidentally, I read that lactose intolerance is about ten times as common as casein intolerance.

It's very possible that that your child could be lactose intolerant, a very common occurrence in those of us with celiac/gluten sensitivity.

Interestingly, while milk cannot be not tolerated, yogurt and hard cheeses (parmesan, some cheddar, etc) ARE tolerated. Yogurt has the live cultures and hard cheeses have a lot less of the casein. Sometimes people can tolerate sheep or goat milk products. I personally can't tolerate anything except greek yogurt in small amounts.

Good luck figuring all of this out! Feel free to give me a call if you'd like more information; he may also benefit from a good probiotic, if he's not already on one.

Actually, when I noticed many years ago that sometimes milk seemed to cause

a celiac reaction in my son and other times not, I investigated what the

cows in the dairy whose milk I bought were fed. After much persistent

calling, I spoke to the person in charge of what the cows were fed. I found

that while these cows were not fed wheat, they were sometimes fed a grain

mash that included barley. They were fed different things on different

days. This explained why the reaction to milk was inconsistent. Since

then, we have avoided whole milk. We don't seem to have any problem with

ice cream, cream (I think because so little of the protein is in these

products), cheese, or yogurt (I think because the proteins are changed by

enzymes in processing). This seems to work well for us. We have never had

a problem with meat (plain, unseasoned meat, that is).

While I have never seen any tests of cow's milk for gluten, the evidence of

my observation of my child's reaction plus the results of my investigation

into the feeding of dairy cows was all I needed to make a decision for my

family. Each celiac must make a decision they are comfortable with as to

their tolerance of milk.

Perhaps if enough celiacs raise the issue, research will follow with testing

of cows' milk, and who knows, maybe producers will follow with milk from

gluten-free cows.

Sorry, my reference to “whole milk†was not very clear. What I should have said was that any milk that contains protein (whole milk, low fat, 2%, skim milk, etc) seems to be a problem. Cream, butter, sour cream and other dairy products that are mostly the fat (cream) where the lighter milk that contains protein has been separated don’t cause a problem. Hopefully that makes more sense.

I've read that gluten is passed on in human breast milk if the mother eats gluten. So what about grain-fed cows? Would there be gluten in cheese and milk? If not why not? I wondered about this a year or two ago and I know someone who is celiac and only eating cheese from Ireland where supposedly all cows are grass-fed...

Are you tired of cooking? Would you like some alternatives? Is takeout

too expensive? If you are like me, you spend most of your free time

shopping and cooking healthy and wholesome meals for your family. WouldnÂ’t

it be wonderful to have affordable and healthy meals delivered to your home

every week?

I am working with a Janice Whiting of Gourmet Dream to create gluten and

dairy free meals to be delivered each week. The menu is flexible and offers

main entrees and side dishes. The pricing should be around $28 for a main

entrée for a small family. Sides run $10 - $12. Delivery will be on

Mondays and Thursdays (you can choose one or both). Delivery runs all the

way from San up to Hillsboro.

The food will be cooked with dedicated equipment and when no other gluten

chefs are around to avoid any risk of cross contamination. All ingredients

will be carefully evaluated to maintain a safe product.

The sizing of the entrees (if that is all one is eating ) will feed 2-3

adults if there are no sides added. However, each entrée contains about

one pound of meat so if you add a vegetable and side dish it should be

plenty for four.

For those of you who are not gluten or dairy free, Janice offers an array

of healthy gluten entrees as well.

So you can get a feel for the types of items Janice will be offering a

sample menu is enclosed. Each week GF and DF items will be clearly labeled

for ordering.

I am visiting the facility on Monday to sample food, review sizing, and most

importantly look at safety standards for those who cannot tolerate cross

contamination.

I have my own seperate equipment that I use and keep covered to make all of my products and I am very careful about cross contamination. If you need gluten free and/or dairy free baked goods to go along with the meals, I would appreciate it if you would consider trying my products. I can provide them to be delivered with the meals.

So you can get a feel for the types of items Janice will be offering a sample menu is enclosed. Each week GF and DF items will be clearly labeled for ordering.

I am visiting the facility on Monday to sample food, review sizing, and most importantly look at safety standards for those who cannot tolerate cross contamination.

If you are interested in this type of a service on a regular basis please let me now and I will keep you in the loop for future communications. Also, if you know someone who might be interested please pass their name along to me. Janice is hoping to roll this out in the next couple of weeks.
