Guest guest Posted March 12, 2010 Report Share Posted March 12, 2010 For those who are lactose intolerant: Hard, aged cheeses contain a great deal less lactose than new, young cheeses (such as mozzarella). The lactose is consumed during the cheese's aging process. Those of us with CD who are lactose intolerant may find that they can eat dairy products eventually, after their small intestine heals from CD and after they've avoided dairy for a period of time. I became very severely lactose intolerant about two years after going carefully, completely GF. I didn't suspect the cause and kept eating more and more yogurt to "fix" my problem, and eventually I became truly ill. I avoided every trace of dairy meticulously for a year. Now, I can eat single servings of any dairy product without difficulty. Bonnie, my guess is that you were referring to Greek yogurt made from sheep's milk. (Lovely stuff, especially in Crete - ah, memories.) People new to it may not notice that Greek yogurt in supermarkets may be made from cows' milk. That will be fine for some people, less so for others. Incidentally, I read that lactose intolerance is about ten times as common as casein intolerance. Interestingly, while milk cannot be not tolerated, yogurt and hard cheeses (parmesan, some cheddar, etc) ARE tolerated. Yogurt has the live cultures and hard cheeses have a lot less of the casein. Sometimes people can tolerate sheep or goat milk products. I personally can't tolerate anything except greek yogurt in small amounts. Good luck figuring all of this out! After much persistent calling, I spoke to the person in charge of what the cows were fed. I found that while these cows were not fed wheat, they were sometimes fed a grain mash that included barley. They were fed different things on different days. This explained why the reaction to milk was inconsistent. Since then, we have avoided whole milk. We don't seem to have any problem with ice cream, cream (I think because so little of the protein is in these products), cheese, or yogurt (I think because the proteins are changed by enzymes in processing). This seems to work well for us. We have never had a problem with meat (plain, unseasoned meat, that is). While I have never seen any tests of cow's milk for gluten, the evidence of my observation of my child's reaction plus the results of my investigation into the feeding of dairy cows was all I needed to make a decision for my family. Each celiac must make a decision they are comfortable with as to their tolerance of milk. Perhaps if enough celiacs raise the issue, research will follow with testing of cows' milk, and who knows, maybe producers will follow with milk from gluten-free cows. What I should have said was that any milk that contains protein (whole milk, low fat, 2%, skim milk, etc) seems to be a problem. Cream, butter, sour cream and other dairy products that are mostly the fat (cream) where the lighter milk that contains protein has been separated don’t cause a problem.
