Guest guest Posted May 22, 2010 Report Share Posted May 22, 2010 In the past I have worked with caterers serving the conference. Each year brought a new perspective on serving gluten-free food to 500 celiacs, but every time the utmost care was taken to make sure the food was safe. The organizers are well aware of the importance of avoiding cross contamination, and I am sure they have checked everything being served to the best of their ability.
