I use nutritional yeast blended with a nut (almond for example) as a parmesan substitute. Another alternative is to make a yummy pine nut sauce. I have Cafe Gratitude's cookbook and really like it, but there are many options. There is a new tapioca starch cheese substitute called daiyo??? that is used on the amici dairy-free gluten-free pizzas that I hear is available at Whole Foods, but I haven't seen it... Good point on the dairy intolerance issue. Generally if you have issues with lactose due to flattened villi this will fade as your stomach heals in a year or two. (If you don’t have a vta-mix or other high speed blender, the sauce will likely be a bit on the chucky side).
