You can make a gluten-free alfredo sauce with any dairy free milk (rice, soy,

almond) and a gluten-free starch for thickening. I use nutritional yeast blended

with a nut (almond for example) as a parmesan substitute.

Another alternative is to make a yummy pine nut sauce. Decadent and rich, with

its own yummy flavor. i tend to like it better than fake cheeses.

Cafe Gratitute and other raw foods places make great cashew nut, macadamia nut

etc. cheese sauces. I have Cafe Gratitude's cookbook and really like it, but

there are many options. (Yes, it's on my mind today, haha)

You can do a search for vegan alfredo sauce recipes- there are probably many

variations out there. :)

Hope this helps!

There is a new tapioca starch cheese substitute called daiyo??? that is used on

the amici dairy-free gluten-free pizzas that I hear is available at Whole Foods,

but I haven't seen it...

Good point on the dairy intolerance issue. Generally if you have issues with

lactose due to flattened villi this will fade as your stomach heals in a year or

two. Casein I think is a more permanent issue if you are intolerant to it...

By far the best raw (non dairy, using

nuts) is this one:

http://www.thedailyrawcafe.com/2007/10/pesto-stuffed-butternut-squash-with.html

If I hadn’t made it, I don’t

know that I would have known there was no dairy. (If you don’t have a

vta-mix or other high speed blender, the sauce will likely be a bit on the

chucky side).

We’re on a raw food kick, so if you

need any dairy alternatives, let me know what you need. Feel free to email me

off list.
