Kale grows well here, even " overwinters " so that, aphids willing, you could eat fresh kale all year long, most years. Our usual way of serving kale, other than including kale with stir fries, is chopped up (a lot of it) with black beans. Yes, there might be some bacon flavor in there somewhere, but it would be bacon analog, not the real thing.
