Guest guest Posted October 27, 2002 Report Share Posted October 27, 2002 Years back i read that the peels of citrus fruit are especially high in bioflavanoids, an beneficial component associated with vitamin C. I have tried eating peels a few times; of course, they're not too tasty, altho as i understand it, dried peel is used in baking. Some posts recently on the science list talked about eating peels, skins for the beneficial elements in them. I have tried this again recently, and while i could discipline myself to eat something not appetizing but beneficial, i have to wonder about this: oranges, at least, and maybe others? -as i understand - are colored, i mean color added, to make them more visually appealing to shoppers. Is this true? Are these coloring agents something i should be concerned about? I suppose going organic shopping would avoid this, but this is not always so convenient when one lives in a smaller community.
