Sprout hazzards include toxins - but they are generally targetted against microorganisms, fungi and insects - rather than against man - and for many young plants our digestive systems are well evolved to deal with their defenses. If fact sprouting things is often an excellent way of *de*toxifying them - since the defenses are often most needed for the extended period while the seed is lying dormant. This certainly seems true for things like wheat - where the potentially-problematic lectins are eliminated during metabolism and growth.
