And also well known are the longer term effects such as insulin spikes, AGE's from caramel and fruit (fructose is even worse than plain ole glucose for crosslinking with protein) I wouldn't touch most of those foods on any regular basis though I crave them of course. one person's opinion.... best wishes to all! Guest guest Posted November 6, 2002 Report Share Posted November 6, 2002 MM wrote: “fructose is even worse than plain ole glucose for crosslinking with protein” Rae from the CrSociety list said (could not find the post) that this is so only in vitro, and not in vivo, because in vivo all the fructose that comes from the intestines to the liver trough the portal vein (I think) gets converted to glucose (by the liver), thus “exposure” to fructose is minimal. And as always, the poison is in the dosage. If you consume a high calorie high-fructose corn syrup diet (think processed foods), your liver glycogen stores are likely to be full and you might get “poisoned”. Not so on a calorie restricted diet, and not from fruit. Fructose has an upside of having a very low glycemic index, if someone’s interested in GI. Micky.
