Just to point out that butter was made with soured milk, as opposed to the sweet cream butter of today. That made the buttermilk sour. Still not the same as cultured bmilk of today. Wonder how the process compares with kefir and yogurt? there is a recipe for cottage cheese using "live" buttermilk. How can we be sure what it is exactly we're making?

Actually, this is the emergency buttermilk recipe - for when you're making something that calls for buttermilk, but you have none in the house.Buttermilk used to be what was left after you churned the butter out, so it was lower in fat than whole milk.Nowadays, what you normally get a the store is a cultured product, but it is not kefir. Cultured kefir is supposed to have many health benefits in the same way as yogurt does, with live, beneficial bacteria.
