Guest guest Posted April 30, 2003 Report Share Posted April 30, 2003 Actually, this is the emergency buttermilk recipe - for when you're making something that calls for buttermilk, but you have none in the house. Buttermilk used to be what was left after you churned the butter out, so it was lower in fat than whole milk. Nowadays, what you normally get a the store is a cultured product, but it is not kefir. Cultured kefir is supposed to have many health benefits in the same way as yogurt does, with live, beneficial bacteria.
