I would be really interested to read some references! Good point about the high temperature. I guess I'll just use short cooking beans like mung and aduki (lentils too) after soaking. I have a tough time justifying long cooking times when we the rich are using much much too much energy. A glitch of mine- I really try to cut energy waste as much as possible and have become very aware of the way I live and consume as a result. Anyway, thanks for the helpful info!
