Guest guest Posted January 14, 2003 Report Share Posted January 14, 2003 You might want to check the recent CrSociety archives regarding legumes and lectins; lectins being this bad bad thing inside legumes. One way to get rid of lectins is to thoroughly cook the legumes. Rae cooks them for 10 hours, but then he says that the FDA says that boiling them for 10 minutes should take care of the lectins. I don't consume legumes, but I guess that if you're a veg*an, then you must get your protein from somewhere; don't forget to add rice protein *powder* so you get " complete " protein. Rice is nutrition poor and calorie-rich, so that's why rice protein powder is better with the legumes. He never suggested that anyone cook it for 10 hours. In fact, he explicitly says that the FDA says that 10 minutes are enough. Come to think of it, I do not consider such a personal attack saner than cooking legumes for 10 hours. But then... I suggest cook for 10 hrs eat 1 cup, throw the rest out. Beans raise my BP. There has to be a reason and I don't know or care what it is, but if it raises BP, it's bad in my book. BP is the number one medical test a person can easily perform as often as desired to monitor health. By analysis I don't need beans to "round out" any proteins. The case for bean protein is highly overstated, IMO. I do eat green beans and sugar snap peas with some regularity, and green peas, and frozen green limas occasionally. BP rise is hardly balanced by the beans fiber content.
